My name is Bruce Cirks and I am The Traveling Butcher. I grew up on a family farm in Illinois. I raised Cattle, Hogs, and Sheep from an early age. I was active in 4-H and FFA. I left for college to become a teacher, but life had other plans. I found myself working in the meat department at a grocery store. I found it interesting and that interest started my love of butchery and cooking. I decided to go back to college and got my B.S. in Meat science. Who knew there was such a thing? I learned all aspects of Butchery and processing from both the practical and scientific perspective.
I went to work in a large slaughter plant but alas life happened. After that, I found myself working in retail and customer service positions, all while honing my butchery and cooking skills on friends and family. I recently left my job of 15 years to start The Traveling Butcher. It has always been my dream to have a restaurant and now I will, albeit on wheels.
